This isn't on the grill but has gotten rave reviews at my place. I spray a small amount of olive oil in a big skillet and turn the heat on 9 (electric), shake cajun seasoning on one side on all filets, place seasoned side down and season the other side. Cook til white comes up almost half way and turn, only once. As they finish cooking and start to fall apart easy, chop them up with the spatula and use them in soft shell taco's. Took me about 20 minutes to feed us all and had no leftovers. Quick, easy to cook, easy to clean up, and happy campers with full stomachs. My wife was out of town and says the principle of fish taco's is just wrong on so many levels, but she hasn't tried em yet.
