Your St Croix rods should work. Most any 5-7' rod will "work", if you practice with it and get the release timing down correctly in accordance with the action of that rod. My dock shooting "mentor" used a 6' med action spinning outfit that he Bass fished with ... he just put on 4lb test line for Crappie fishing.
As for plastics ... use whatever brand or style or size you like. I'd just recommend using a solid body plastic, since they do tend to skip better than hollow plastics. Panfish Assassins, Bobby Garland, Mr Crappie/Strike King, Slabanator, and Southern Pro are brands I use ... depending on the shape of bait I want to use, or the color scheme that's producing the most hits.
