You probably won’t have much luck getting readings if you mount it in the bottom of the boat. I tried doing it with a 2d transducer and readings weren’t very reliable. You’re Probably not going to be running very fast on a lake like that so I’d mount it on a transom a couple inches higher than the bottom of the boat and I’d leave the bracket pivot screws loose enough that it would kick up if you hit a stump.
