I can vouch for the yum yum on the snack sticks, just may have to have another!!!!! Even Carol liked um and she doesn't like deer meat but does like spicy food.
They did add some pork fat to the sausage, Bill. I fried some this morning and it made it's own grease.
Save a package of those sticks till fall.
I had my deer processed in Illinois, and I got bologna, summer sausage, and some of those Slim Jims with the jalapeņo and cheese comin. Hope they are good!!!

When i am making deer sausage i add 1lb cheap storebought stuff to 5 lbs. ground venison.
i do the exact same thing mr. jim. got one heck of a grinder.

But what is the "cheap stuff" you're adding, is it pork sausage or just lard??
with mine i use pork sausage. i guess i assumed that is what jim was takin bout.

Some people add bacon to the deer meat and make bacon burger. It's good.
