Looking for recommendations. Want something I can throw in the truck bed, fits 2 people, and use a small electric motor, and most important.... fishing friendly.

From what little I know canoes are not fishing friendly as they are easy to tip over. I think I would go with one of the 10 or 12 ft plastic boats and you would have a more stable platform. Most you can run a small gas motor and also a trolling motor.
I've have a old town 16 guide, works good for me.
If you put trolling motor on it, I think you will need to register the boat with state (get numbers & decal). Keep that in mind. Had a buddy get fined years ago by a NC game warden for just this.
^ Creek boats, a small chore to load and unload the two man by yourself but their well built and much more stable than a canoe. I use mine for fishing and hunting and can stand up in it with no problems.
Those creek boat look interesting. How do the mixed controls on the trolling motor work out?
It has a rheostat type control, to adjust to the speed you want, with reverse too. Has two foot pedals tied by cable to the trolling motor, push the right pedal you go right...
Works really well, the two seater model fishes good with two people.
Those creek boats are a lot cheaper than the bassyak I have. Wish I would’ve found those years ago.
