Watched the show on the History channel last night about Dixie. In Jackson they did a segment on the Apple Inn and there signature Pig Ear samich. I'd like to knoiw how many have given it a try.

I'vbe eaten Chittlins but never pig ears. Saw Guy on DDD eating them one time and he bout hurled LOL
That would be the "Big Apple Inn Resturant" located on Farish St in downtown Jackson, and they do serve pig ear sandwitches. I don't get it that part of town very much tho.
