We call them shellcrackers in Ga and hereabouts, officially they are the redear sunfish. I have no experience in TX, but am sure there must plenty; 2 states over in Az, Lake Havasu has a bunch of them grown huge on the invasive quagga mussel. They are the biggest of the non-hybrid sunfish family, aggressive, and I love them. Good luck getting on the chinquapins! That's a new one on me.
