there is no doubt that the best eating fish is sac-a-lait on the bone or fillets.

Hands down Blugill. Crappie are great but the Blugill have such a firmer texture to the fillet. When we have our fish fries in the spring, we usually have some crappie in with the Bluegill and their always the last ones left in the basket when we're done. I'm not taking anything away from crappie though, still leve em to.
