People look at my kids like they are crazy when they tell them that fried squirrel legs and biscuits are their favorite meal. We have it once a week once I start hunting. I also give my pastor a mess when he wants them.
And here is a secret most wildlife cooks already know...but never make a stew without squirrel meat and broth in it. It make a stew crazy flavorful.
I like squirrel fried up with biscuit and gravy but they are so darn hard to clean for the amount of meat you get. I used to have bird dogs and daddy had beagles. I love fried quail and rabbits. Not enough birds any more to justify feeding dogs. Getting harder and harder to find places to hunt. Got a buddy who has some outstanding beagles but coyotes are tough on rabbits and there is a hawk on every fence post around here. Guess I'll just have to stick to fishing which I love too.
