I am about to start experimenting too....going to buy a Big Green Egg today and I am going to brine a turkey for a few days then smoke that joker on the egg. I love cooking and playing with different methods.
What windstone says plus just google masterbuilt and info there on cooking everything

BEST way I've found to do a Turkey is to Spatchcock it (cut the backbone out), then inject with creole Butter injector, season the outside, then cook at 350 on the Smoker til done. I do it on the BGE and it's the best bird I ever ate. It takes 1/3 the time to. Tip of the day is. Put crushed Ice in a gallon ziplock bag and place on the turkey breast the last 20-30 minutes while it's out coming up to room temp. Keeps the breast cooler since it's easy to dry out
