    Looks tasty to me. But I think it needs a bit o' the trinity (bell pepper, Onion and celery) to really make it pop.

    We used to cook something similar which the Portuguese called "Jag". the difference is the sausage which is called LINGUESA and it's made mainly from a company called Amerals sausage company out of New Bedford, Massachusetts.. it's the same sausage the generally use in crab and lobster boils up north,,,,Just use LINGUESA, Rice, opinion, and even peas sometimes,,, Real good dish if your ever feeling adventurous....
