30 lb will be plenty for fishing........ if all you are gonna do is single pole jig, and if speed is not an issue. If you are planning to use it as your main propulsion unit as well, you should go with a 45 or 50.
just something to fish with or maybe travel a couple creeks for a 1/2 - 3/4 mile and back or so tree rat hunting. The Minn Kota 30 lb thrust is only $100 at Academy. Wanna keep this little boat light and not gonna do much to the boat itself. Nothing fancy, just a little beat around the creek type boat. If a 30 lb thrust will get to to 2 1/2-3 MPH. That's all I need

If you gonna fish creeks with current figure that into the equation, proud of the bigger motor in the spring on Scuba river. Really the only time I use it.

If this is your only motor on the boat, you may have to troll a mile or more, just to start fishing. This will be a 30-45 minute troll of full blast just to get started.
I would get the highest pound made for a 12v system. I have a 42lb MG that I used on my 2 man boat last year. It was fine, but long trolls between structure took awhile. I will be switching back to my 55 lb Minn this year. It is like 4WD in a pick up. Ain't worth nothing till you need it, but when you do, then it is worth more than you paid for it.

The problem with a bigger thrust in most cases is the longer shaft. You don't need but 36 inches. I would not go longer than 42 on the shaft, trust me. Were your going in that boat its a pain picking the motor up and down to cross sand bars, etc.
You can cut it down.
