E Z, your gonna like that smoker. If you need any tips let me know, don't forget to burn the new off of it before putting the bird in!

Now ready.. Freesh, this ole hen weighs 6.25.. I plan to set the temp at 275 (max) and set the time for 3 hrs. I don't have the remote kind, so I'll jus have to check in a couple hrs. She has that pop-out thing to let me know when she's done. I also have a digital thermometer to be sure. What do u think?

Looking good! Let it rest after cooking, I don't trust those pop-up things they usually are set on the high side to be gewber proof. They tend to let you over cook your bird.

My turkey was small, about 8.5 lbs, so not much larger than your hen. I cooked it for 4 hours, the smoker was pre-heated for one hour. If you line the flat drip pan in the bottom of the smoker with foil you will thank me later. Also spray your racks and with Pam. Don't worry about hi-jacking anything, I enjoy the heck out of this stuff!
