    I'd heard of dipping filets in mustard and then the meal so I tried it. I kept a dozen from Okatibbee today and fried them up. The only bad thing, after my surgery I could only hold 2 filets and 2 puppies.

    Oh yea, the mustard makes the breading crunchy. I'll be doing this again.

    scott, been doin catfish in mustard for twenty five years or so, not no mo, now it's crappie in mustard then batter. gooood stuff....

    just be sure you pat em dry before runnin thru the mustard...

    Soak in Louisiana hot sauce for 10 min, coat in mustard and batter as normal. GREAT!! Try it next time. Not too spicy, just rite.

    The mustard trick works good, that is a huge crappie for Okatibbee! I wonder what fillets covered with buttermilk ranch dressing then meal and fried would be like?

    I also add sprinkle Tony's season all on the fish when I roll them in the mustard. Been cooking this way 30 years at least. Actually don't know any other way. Wish I could stop at 10 or 12. Danny
