I make those on occasion. It's a pain stuffing them. I put the filling in a gallon ziplock. Cut off the corner of the bag and pipe the stuffing in the noodle. Less mess and easier than hand stuffing. I like shrimp or crab, but have done it with Italian sausage and it was good also.
