Cut your fillets into bite size pieces then put into a bowl and coat them lightly with Louisiana hot sauce. Then take a pack of bacon and cut in half. Wrap each crappie nugget with half slice of bacon and pin with a toothpick. You can grill them but I put them in a deep alluminum pan and bake them so the bacon fat gets trapped and cooks in the fish. I put some old bay seasoning on them and cook in the oven on 350 for about 30 min and then I drain the fat and put them back in on broil just a few minutes until the bacon is crisp on top. Enjoy!
