I don't add any water but I warm my sausage and cheese up in the microwave so I don't wear my forearms out so bad when I mash it all together. Lol

I had to add water when I made mine. Mine were good but a little too big.

Sausage Balls (Paula Deen's way)
1 pound RAW sausage
3 cups Bisquick
4 cups grated cheddar cheese
1/2 teaspoon black pepper
Bring sausage to room temperature. Mix all ingredients thoroughly by hand. Roll into 1" balls and bake on a sheet pan at 375 degrees for 17-20 minutes.
Coon Biscuits (Mama called them beer rolls)
1 pound COOKED sausage
3 cups Bisquick
1 cup shredded cheddar cheese
1/2 teaspoon pepper
12 oz. beer
Mix all ingredients. Spoon into muffin pan. Bake at 375 degrees 17-20 minutes. Makes 12 rolls.

Gonna try it again later today. Still have 90% of the mix, will add some flour and kneed by hand (just mixed it with spoons the first time), and will cook on 325 instead of 350. They didn't taste bad just didn't have the right consistency.

Did you brown and drain your sausage first?
That the way I do mine. That way the coon balls are not to oily.
I mix my cheese, bisquick in a bowl while waiting for my sausage to brown.
Let it cool and mix it in with a 1/2 cup of water.
