    The fastest man I've ever watched personally with a knife is Nimrod. He doesn't waste any meat and he doesn't cut the ribs off the fish. If I tried to use a knife that fast, I'd just have two fingers on my left hand.

    I never have been good with a regular filet knife but can cover some ground with an electric. I usually ice mine done before cleaning and aint nutting but meat when it goes in the house.

    Man I am going to have to get someone to show me how to do it without cutting thru the ribs that's how I do it and then cut the ribs out in a v shape as to not lose the meat below the ribs. Don't see how you could not cut thru the ribs and still get as much meat to me that would be wasting a bunch of meat.
    If the fish aren't bitting just remember your not at work ! :D
