I try to have 2 electric knives when I am cleaning 20+ fish. I do this so I do not have to stop and let the knife cool off. Those knives will get smoking hot after a while. I think I have one Wal-mart special and a Rapala one that will run on 12V dc or 110 V ac. The knife is important, but the blades make the knife. I use the pointy blades. They seem to work better for me.
