I always unhook at the top. Though I might reconsider.

Never......always at the edge of the water....ive heard of several incidents like yours. And regardless of the grade of the ramp, I never unhook at the top.
Never ever would I unhook my new boat, that I have no idea of how it's gonna react on the trailer. Specially ifn the ramp is steep or very long. Nope, jus wouldn't do it the first time.

Nope and the reason why is because about 6 yrs ago the same thing that happened to you happened to me at Tunica and yes it was a new boat. No major damage though.
I let a foot or so slack in the the winch, but I don't unhook it til the trailer tires touch water...with just me or 1/2 dozen people.
Mississippi Crappie and Alabama football...Life is good.
I drive the truck......HE unhooks the boat and rides down the ramp unhooked. Carpeted bunks. Always hook it up after loading up to leave.
