    Red Beans And Rice

    This is a recipe we came up with when I worked on the railroad. We stayed in a dorm in New Orleans and we cooked what we ate. The main ingredient for this recipe is the "Blue Runner" beans. It's cream style and makes a good thick gravy. Our local Wal Mart has them now.

    2 cans Blue Runner beans
    2 cans store brand red beans
    1 can Rotel
    1 large onion, cut up
    1 large bell pepper, cut up
    1 tsp chopped garlic
    1 lb smoked sausage, sliced
    Cooked rice

    Place sliced sausage on a cookie sheet and brown in oven at 350. Mix other ingredients in large pot and bring to a simmer. Add sausage after browned. Salt to taste and simmer for an hour or more. Serve over rice with garlic bread.

    Sounds good, never heard of those beans before. I put a little brown sugar in mine.

    Cajun style red beans, Rice and Smoked Sausage
    1Package King Cotton Cajun style smoked sausage.
    2 cans red beans
    1 can chili hot beans
    1/2 to 1 chopped onion to taste.
    1/2 t spoon garlic powder
    1 t spoon seasoning salt
    1 t spoon black pepper.
    2 strips bacon.
    1 T spoon worcestershire.
    1/2 t spoon hot sauce.boil and then back to a simmer for a hour and a half. Add sausage and and simmer 30 more min.
    Fix 3 cups rice to go with beans. Enjoy.
