a 2 burner would do just fine for the type of cooking you do !!!there is no real advantage the 3rd burner is going to give you !!!

I'm fixin to buy a new grill. Is there any reason I would need 3 burners instead of 2? Maybe something I'm not remembering? My old grill has 4 but I've never needed all of them. Its rare but once in a while I might do a pork roast for some Carolina barbeque and 99 times out of 100 its just for my wife and me. Thanks

I am usually hesitant to recommend products, but..... I bought a Charm-broil 2 burner "Infrared" gas grill 2 years ago at Lowes. It is the best grill I've ever had. It takes a little more cleaning than a "regular" gas grill, but it has been worth it. Everything cooks really well with no "flame ups" etc. Even chicken breasts stay moist and juicy. You might want to check it out.
only time I need 3 is when I b'que a deer 1/4 but if you plan on that you need 'em
A 3 burner is better for indirect cooking.
I agree with the indirect heating for the three burner, However, if you are only cooking for two, that can be accomplished with two burners as you only cooking small amounts. Need to look at arrangements of the burners. Can they be sectioned off, like left side, center, right side, or are they running from one end to the other. If you are going to do any indirect heating. If I am wrong and all are sectioned off, then I apologize as I haven't cooked with a gas grill in for ever. I personally prefer the ancient method of charcoal. Just my preference is all.
I grill with wood so im no help but I do like infrared models from what I see
I got one burner. It is all in the placement around said burner.
