Tarheelwx--you are right on with the size of fish to fillet. There is not enough meat on a fish under 11" for a fillet. Those 12"-13" fish are my preferred size. After the spawn, I do like a few of the larger fish for a special recipe I found. You take a thick fillet and press Parmesan cheese on one side. Place the fillet cheese side down in some melted butter and cook about 4 minutes. Flip for 2-3 minutes on the bare side. This is actually a saltwater speckled trout recipe but I found it works on those big crappie that one occasionally catches.
