Back in early summer, Charles had the new Humminbird Onix 8 with 2D, DI and SI installed. He also had the new Humminbird 360 Imaging installed as well. The learning curve has been quite steep. I've been watching numerous Youtube video's and reading different articles. I also take the owner's manual out on the boat every time we go fishing. This past Saturday I finally figured out how to copy screenshots to a SD card and I'll post some of them below for you.
Let me make the point that all the technology is nice, but you still have to get the fish to bite your hook. One thing I have heard is that the technology will not necessarily help you find fish, but it will definitely help you know where they are not. Probably the most important thing that has happened is to increase our confidence that we can find and catch fish each time out. We've learned so much from folks like Monk, Rod King, Freddie and many others over the years on this website. We now have the pictures to show that the things we learned do work.
360 Imaging. This picture was taken about 50 yards from one of the boat ramps. We did not fish it that day, but I feel 100% confident those are crappie on the right side of the screen. You can pretty well guess what that is on the left.
Side Imaging. This is one of our favorite spots. Lots of baitfish and crappie in this shot. This is where we got our 14' and 14.5" crappie a couple of weeks ago. One of the more interesting things in this shot is how you can see the schools of shad are near the surface. Look at how long a shadow they make compared to the stick on the ground near them. Deep water is darker and shallow water is lighter.

Can't remember where I took this, but a really neat shot of schools of fish.
Combo 2D/DI. This could be crappie. We caught several undersized ones in this area.
2D This is one of the so-called community holes that many people fish. We were long-lining this day and were not prepared to go deep. Definitely think these are crappie.

I would like a 360 but I can't bring myself to pay for it. I've thought about mounting my transducer on a rotating mount. I mostly troll for anything anymore and I don't particularly look for fish. Like you said, I'm really looking for bait that's been scattered or very loosely gathered together. This usually indicates that something is working the bait and causing them to break apart. Its difficult to see fish in the SI unless you get very close to them or there are a large number of fish gathered together in a school. The SI will show the pattern of the bait and where they are in relation to the track of the boat. You can tell from you SI pic that bait ball is elongated and moving. Which would indicated there's activity causing this. If its not current or wind, then its got to be what you're looking for....At least that is my penny.

You are exactly right in your interpretation of the different types of images.
We have found the SI to have have the best detail but is excellent for long range scanning. When we appraoch something noticed in a long range scan, we then switch to the 2D/DI split screen and even magnify if needed for close combat.
JL is like a wizard with those systems. The screen shots he is producing now almost compares to those by the big boys that post on the Humminbird Onix/Side Imaging web site; we NC fisherman will now be able to visually validate with our own local experts have been sharing with us all along, our locla experts are **** smart.
