I use regular old vegetable oil. I used peanut oil in my turkey friar one time and didn't think it tasted as good as vegetable oil. I think everyone has their own opinion though. Yes, you can substitute shortening. I know you can in a small friar anyway, I guess you could in a turkey friar as well...........

You can definitely use shortening but peanut oil is the best. Its a little pricey but it takes heat well without burning. My second choice would be Canola oil.
My ex father in law uses straight lard and his fish taste great.

Peanut oil would be my favorite but any of the above mentioned will be just fine.

Peanut oil, filter and reuse. Keep a good constant temp of 350-360. When cooking for a bunch we use dutch oven cast iron over propane. When it's 4-8 people I just use my electric cooker. It keeps the temp better than propane. Dang propane is either too hot or cooling off... constant adjustment and too little beer drinking.

I use vegetable oil 90% of the time with lard the other 10%.Whhen I cook for a few people I use electrtic it uses less oil and better heat control. Large groups use the propane, buy a oil thermometer.Andy's fry mix rocks.Good eating!

I have used it all and cooked it in just about everything! Main thing is cooking temperature and a good thermometer! Just kind of like cooking chicken. You have to have your grease hot enough to do the job but you can't have it too hot!

I use canola oil for for frying anything. It has all gotten way to high. I let it cool when done and then pour it back into a bottle and stick it into the frig. for next use. Unless you have used for a lot of frying then just throw it away. You can usually tell when it needs to go. Keeping it in the frig. helps.
