Not smoked but grilled is great! Use a grilling basket, layer thin sliced onion and bell peppers (red, yellow, or green) on bottom. Coat filets with olive oil, then I use cajun seasoning to season the fillets, layer them on top of the onion and peppers, then put another layer of onion and peppers on top and put the top on the basket. Grill till fish is white and flakey.
I had this for first time last June with walleye in South Dakota, I thought this can't be as good as fried, it is very good!!!!!!! When they did it up there we used fresh walleye caught that day, did not scale or skin the fillets, put on aluminum foil, oiled, seasoned, and put onions and peppers on top of them, grilled till done. You do not want to freeze fish with the skin and scales on them so I use the basket, with fish out of the freezer. I have only used frozen crappie for this, but sure that fresh crappie with skin on would be great if you had some biguns. I might just go get some walleye out of the freezer and have some for dinner, hate for them to go bad!
