I had never seen a "pout" Looks like a cross between a sturgeon and a grinnel...spelling*

Burbot, "pout", eelpout, fresh-water ling.....whatever.... it is the freshwater cousin to the cod. They like deep cold water.
Lots of people consider them a trash fish, but the straps of meat found along the top of the back are pure white and boneless. Strip them out and slice them into medallions a half an inch thick and dunk them into a salted boiling water bath for a couple minutes and serve them with dunking butter and you'll wish you have several pounds of them.
They are ugly to look at and slimey as heck to handle. Yes, they can be a nuisance during the winter when walleyes are the preferred fare and they seem to get a bad rap from most angler, but they do have a hidden reward.
