    Charlie can definitely char some ribs. I miss that place. Yes, he is a knucklehead and will hold court on any subject. That was your prize.

    Lots of smoke is right, pour it to it. You're right Danny, that was my prize for sure. He still won't tell me what's in his BBQ sauce. Says it's been passed down from his great grandparents. Some of that char comes from that I'm sure - not a dry rub. He won the world championship BBQ brisket at the Houston livestock show and rodeo several years ago which is a prestigious event in my opinion. His BBQ trailer is a $60,000 unit.

    I have been learning the art of BBQ'ing and doing pretty good but I have yet to get a char like his. Next time, more smoke...
