Filet all of them my family is spoiled and hate the bones but I like to nibble the fins after they are fried, I got that from my father. I laugh when company comes over and they see all those little filets and they say you gonna fry all those little filets. Minutes later I can't keep up with the batches they are eating them as fast as I can fry them up. The left overs usually consist of the bigger filets which my wife used to make a fish salad for lunch the next day.

Way to go vet! Working you way up to using both hands to count. Don't worry, I usually only need one hand to count also.
