You're right about that, BC ... they may be getting $0.15/lb to net them, but the processors are getting about $0.37 or more per pound and the high end restaurants that serve them are asking .... well, take a look at what I copied out of a Journal article : "At Ward 426, the fish surfaces as “Kentucky Carp,” a $24 special browned in butter and served atop sweet potato puree with roasted fig jam and mushrooms pickled in balsamic vinegar."![]()
