In the past, we've been known to keep fish on ice for a night or rarely two nights. Do you guys ever keep fish on ice or do you fillet immediately?

Second question regarding this, I always put my fillets in a bowl of water with a few shakes of salt. I keep them in the fridge like that over night and then either eat or freeze in water. How do you all do this? Thanks in advance.

One reason I asked this is because I took a friend out the other day and he basically told me I was nuts for putting them on ice over night.
