Wiper and White Bass are very good table fare. I clean them up and take out the red meat and then fry them in a beer batter. They are really tasty! The one thing I do not care for is cleaning them. They have a distinct odor of shad and the rib bones are considerably tougher to cut through than that of a crappie.
I have not tried them on the grill but I will have to give that a try. It sounds good!
