Wow I am impressed. You know hot water cornbread? That has been in my family for much longer than I. We use to have that all the time and with greens and a little hot sauce (the clear kind) it is great. Take that hot water cornbread and cut it in half and paste it with butter, oh man.

Not a lot of people around this country know that stuff.

You are probably right for the most part, but I have run into lots of people here is East Texas that don't have a clue as to what that is, LOL!

Well it's easy. You get water boiling and mix it with cornmeal until thick so you can make some that are say 3" long and 1" thick and can be round or flat, we always made round and long like the 3" (it will need a bit of salt too). Then you fry it until golden and eat with butter or fake butter. Good with fish as well as things like my family recipe for butter bean soup (now I am not talking about Lima beans either, only speckled will do) or lentil bean soup.

Now our soup is not watered down stuff, but thick and hearty. We even put okra in it and ham and can have drop dumplings too. Other than that just regular veggies like celery carrots and such.

Now this is some kind of fine eating for sure! If you want the recipe I will put it on my web site if I have not yet.

Prefer jigs with out collars except for bucktails.

Actually like to have some of both. since I only have the one mold I do all my molding then cut collars off and whala!! no collar jigs. Saves me money while I build up the money reserve to buy the molds without collars.

Wish Do-It would make the molds the old way where you had 8 jigs on one side and 8 on the opposite side.
