AMEN on the hardening. I was a cook, and I can't tell you how many time replacements didn't come in on time. Both overseas and stateside. One shift, all personell, for months on end. After about a week, your tail quit draggin' the ground, and you got your second wind. O330 till whenever, to turn back into the kitchen at 0330 the next morning...7 days a week. Didn't matter how many troops, and how few cooks, three meals a day, and they better be right.
