    How soft? You mean like soft plastic or chenille? I make some flies with squirrel tail as a wing and a tail. Actually some have a tail and some no tail, just how the pattern is. Here are some I tied called Bream Killer. Now this pattern calls for White legs, but I sometimes just add a different color. I thunk you could just use a jig and tie something similar for your jigs with Squirrel Tail!

    Don't know about a video, but it's very easy to do. Once you have your tail tied in and flash if you want, tie in a short piece of the color you want as your stripe and leave hanging off the back end. Then tie in and wrap your main chenille just before you do your whip finish, bring that piece of chenille you left hanging off the back and pull it forward and trap it at the head which gives you the stripe. Then just do your whip finish.

    Haven't seen a video that I can remember but it's not that hard, just follow Skip's directions.
