Just get a high pixel camera that has a timer and get a small tripod for it. The key is lighting and lots of it so there is no shadow. Not too bright but from all angles you can get. The tripod will allow for perfect steady pictures and the timer lets you remove your hands so you don't move the camera.
I love taking my kids fishing, now if I could just manage to fish at the same time.
I have an Olympus Stylus 710. An older model but its water proof and shock resistant. I use it for work more than anything else.
One thing to look for in a small point and shoot is a Macro mode. This allows you to focus on things at a very short distance. One mode is 10" and the other is like 3". This allows you to get very close and fill the frame with your jig and keep all the details nice and sharp.
