We actually hunt them with a bow on the river! I spend countless ours chasing these beasts! I love them smoked and so does everyone that has ever tried it. No one asks for more crappie. They always want more smoked fish. Amazing. I fish for crappie ALOT. They great eatin to. The best one about buffalo is one of guys at work. I took some in to work one night and he ate every last bit! He don't even like to eat fish! That's awesome stuff right there!

I would like to give smoke buffy a try, I have had it ground up and made into a pattie mixed with something and deepfried and it was very good.

We have big feeds at camp. One time you will have to come down. We do it several times a year! No complaints at all.

Any chance you would share how to prepare the Buffy for the smoker? Nice catch cl and I'm sorry to hijack the thread but that made me hungry.

Very simple. I use canola oil and barbecue brush. Put the oil in a bowl and mix cavenders seasoning in it. I also put Tony's seasoning in if I want a little fire!! Smoke it using red oak chunks soaked in water over night. The fish is easy to prepare. Just fillet them bad boys. Put the oil mixture on both sides right before you put them in smoker. Baste them with oil ever 15 minutes or so. When they are done the edges will be crispy. That's whole trick! Then you grab a cold one and sit down and pick the bones out and eat! The bones are not hard to pick out of the bigger buffalo! Buffalo ribs are better than frog legs!! I wi drag myself a million miles to find buffalo. Frogs I would turn head lamp on after eating buffalo ribs....WOW!!!!!
