Tried this out on some crappie fillets and was real pleased. Mrs said she really likes it this way. Take 1 cup tomato salsa, add 1 - 8oz can crushed pineapple, 2 tbl sp honey mustard, 1 tbl sp prepared horseradish, 2 tbl sp corn starch, and mix in a bowl. Spray fillets with nonstick spray and coat with McCormick lemon pepper. fry on one side, flip fillets over and add mix from bowl. Cover pan and simmer for 5-6 minutes. Mixture will thicken, serve over white rice. Hope you all enjoy this as much as we did. As a side note, we also tried this on some chicken medallions and was just as good.
