Hillbilly,
I tried this one last night with catfish and it was the best oven fish I have had.
Panko bread crumbs-Toast at 350 for 15 to 20 minutes till they turn a little golden brown,let cool.
Roll in Wondera Gravy flour then dip in a egg wash then roll in Panko crumbs.
Put on wire rack on a cookie sheet and spray with pam and bake at 425 for 20 minutes.
I just seasoned with salt but add your favorite.
