    Default Fantastic fried filets

    Have always been a fan of using instant mashed potatoes- ie. Potato Buds, flakes etc., but yesterday I decided to try the roasted garlic , green onion and chives, and yes the "sweet potato" flavored instant packets. I added about 25 % yellow corn meal to the dry mix. Just coat your 2 x 2 inch size crappie filets(more coating area on your fish in this size= more flavor!) that have soaked in plain water, no egg wash, beer, or 7 up needed. Really easy and really good!! The sweet potato -flavored have a nice orange color along with a nice hint of sweetness. I used the Betty Crocker brand.
