    shake fillets in a bag of corn meal, i use fresh stone ground corn meal, heat about 1/4 inch of oil and 1/2 stick of butter in fry pan to about 375 degrees, drop in fillets and fry until golden brown, remove from oil, place on paper towel and season with cayenne and chicken seasoning,, yummy,,
    It is not about the equipment you have to use,
    It is about how you use the equipment you have. :D

    That is the only way to do it. Yellow corn meal and lots of black pepper for me!
