i rub em down and smoke em for a good while. at about 230. about a half hour before they are done i sauce them.
once i can tug the two middle bones and the meat pulls away easy, they are done....sometimes they take 3 hours sometimes they take 6.
boiling is quite possibly the worst thing you can do to ribs. i like your modification to smoked ribs.
