    i always soak mine in salt water cause thats what dad does taste fine to me

    I do not soak White perch. I just put water in the bag I freeze them in. I do soak catfish fillets in ice water before I freeze them, seems to get some of the blood out of the meat.

    I put the fillets in a bowl of cold water as I clean my fish, rinse under cold water and place in a ziplock freezer bag. Fill the freezer bag with tap water so the fillets are well covered. Next I get all the air out of the bag by zipping the bag almost all the way shut and bringing the opening lower than the water until the air is out and the water starts to trickle out - then quickly zip it the rest of the way closed. Freezing them this way keeps them tasting as close to fresh as frozen fish can for up to 6 months.

    I do this exact thing, and as a testimonial on how long they will last "frozen", I found some earlier this year in the bottom of the freezer that was caught and frozen 4/05. My curiosity had me thaw them out and fry'em. Couldn't tell the difference in them and the ones I caught this year........no "freezer burn"!!!
