Getting here took a little prep work this morning. Grits had to be made, the Pork Belly Cracklin's was already made, and some creativity to the assembly was required.
I just pulled out a few Cracklin's to chop up but as I chopped they grew! Suddenly I had more than I thought I needed, I was wrong.
Laying down a layer of 20 minute grits first then sprinkling the chopped Cracklin's all over before topping with Shredded Mexican Cheese.
Sliding the 2 over easy eggs on the cheese finished the build but a bit of Frank's Red Hot "kicked up another notch" as Emeril says.
Surprisingly I burned thru this breakfast pretty fast today, lots going on project wise.
