I posted a while back Sam's Club was selling Pork Belly well I cooked part of one down today.

I keep our Meat Keeper cold so these cubes of Pork Belly are 1/2 frozen starting out. I'm cooking outside using a Lodge Cast Iron Enameled Pot and Induction Cooking Eye.

This is 1/2 way thru the 6 hour rendering, the temp is a steady 235 degrees, stirring occasionally.

Here at the end I scooped the Pork Belly into a Pyrex bowl and just tossed them in Sweet Meat Rub. I buy the seasoning blend here

Regal Sweet Meat Rib Rub - 16 oz.

This is a fantastic rub just a little sleepy so a light addition of cayenne pepper is needed if you want some heat.

The little Pork Bites are Ultra Tender, I'm destroying this bowl...........I can't stop eating them.

Gambino's King Cakes are the Best in my book because they stay the same moist, tender, King Cake days after cutting open. They do still put the little "Baby" inside so use caution when eating. The tradition is whoever gets the baby buys the next King Cake. Well I bought this one and got the Baby on the second bite. Guess I will buy another one very soon.

We are already eating this one before I thought to share the experience. A wonderful Cinnamon Roll inside with Mardi Gras Icings on the outside. Carnival Course Sugar is sprinkled very liberally over the top creating a festive treat.
