I have never owned nor tried an electric knife. I prefer a thin blade, As far as blade thickness goes, Boning knife. I like the thinner blade of the two knife set at Sam's club that's back where the commercial kitchen supplies are. Two boning knives $8.96 and they hold an edge too.
