    Default Triple header for the Fourth.


    Put on a pork butt, two chickens, and a brisket. Tending the fire and adjusting the damper to compensate for the rain showers passing through.

    Well, how did the brisket turn out for your first attempt? What internal temp did you take it to? I like to take it to about 195 if I'm slicing it or about 204 if I'm chopping it. That appears to be just a brisket point - is that correct?

    No one had time for photos when it was done. My time management was off so it was late getting it to the table. Rushed the rest time. Not enough seasoning on the brisket. That's the down side. The up side was the brisket had good smoke and was fork tender. Not a piece of the brisket or the butt left. All I all it turned out well.
