I make a homemade blend that varies from time to time:
No real measurements just judge by eye:
3 parts corn meal
1 part flour
Then I add several different spices:
lowry's seasoned salt
black pepper
paprika
onion salt
and occasionally some cayenne.
nothing too fancy -
I dip in buttermilk, regular milk will do and then batter, and fry as normal
