Never have canned any but I did pickle some bluegill fillets a long time ago. They actually weren't too bad; I never made them again as my wife didn't care for them.

Has anyone ever canned crappie? I once read in a canning book abou canning fish and using them like you would tuna or salmon.

My Alaskan friend used to can all kinds of fish. We would open a jar at the fire station and add cream cheese, green onions, sour cream, jalapeņos. Then make a dip for crackers. It was very good but a lot of work to put up.
Crappie croquet
I used to can salmon a lot....would cut in chunks, pack tightly add a little salt into clean pint jars, with new lids in hot water...tighten lid. Place in pressure canner an when starts to whistle ..allow to cook for 90 min. Turn off heat , let cool then store away and ready for use like tuna fish, make fish patties or as mentioned add ingrediences to make dip.

I canned some Buffalo and even tried Crappie. Makes OK fish cakes (bread crumbs , egg , seasoning ) pan fried.

Use only pint jars, don't add any liquid, process them for 100 minutes at 11 pounds on a dial or 10 lbs on a weighted gauge.
A old friend of mine told me he knew a feller that canned the american shad that runs upriver from the ocean in the spring.He told me you couldnt tell it from salmon.They all use to get togather and play rummy a lot in the guys shop,he had a kitchen and they would make"shad patties".Archie said every once in a while someone new would come play cards and they never knew they were eating shad.I dont know how the guy canned them,I just remember him saying in jars.
