I can't remember where I got this recipe and it's nothing earth shattering so forgive me if it's old news or if someone on here posted it first but it is the best I've had:
1st bowl - dip fillet in vinegar
2nd bowl- coat w/flour that has 3 good shakes of pepper in it
3nd bowl - dip in your egg wash
4th bowl - coat w/corn meal seasoned with whatever you like (I used a mixture of Louisiana fish coating and Louisiana chicken coating , one is corn meal and one is corn flour).
Fry em up.... mmmmmmmmmmmmm
Came out nice and dark in color, non-greasy, crispy on outside, tender and hot on inside.
Gotta go now and defrost some slabs for tonight
